Ingredients
Ingredients(Tsatsiki Sauce):
1/2 Seedless Cucumber (seeded and chopped finely)
1 cup Plain Greek Yoghurt
1 tsp Fresh Lemon Juice
1 Garlic Clove (minced)
Salt & Pepper to Taste
1/4 cup Fresh Mint (chopped)
Ingredients (Sandwiches):
4 Pita Pockets (halved crosswise)
3-4 Steaks
Salt & Pepper to Taste
4 Cos Lettuce Leaves (torn into bite size pieces)
1/4 cup Fresh Mint (loosely packed, leaves)
1 cup Cherry Tomatoes (halved)
1/2 Seedless Cucumber (halved lengthwise, seeded and sliced)
1/2 cup Pitted Kalamata Olives (halved lengthwise)
2 tbsp Fresh Lemon Juice
1/4 cup Olive Oil
Preparation
Step One - Combine diced cucumber, yoghurt, lemon juice, garlic, mint, salt and pepper in a small bowl, stitting until smooth.
Step Two - Place the pita wrapped in foil in a preheated oven (150C) for 5 minutes or until warmed through.
Step Three - Grill the steaks for 3 minutes on each side, or to liking. Set aside on a plate, cover with aluminium foil and allow to rest.
Step Four - Toss salad ingredients together in a bowl and seasonw with salt and pepper.
Step Five - Thinly slice the steaks.
Step Six - Stuff the warm pita pockets with the salad and steak, then drizzle the filling with tsatsiki sauce.
