Leg of Lamb with Mint Sauce

Ingredients

1 Mick's Meats Leg of Lamb
2 tsp Sea Salt
1/2 tsp Freshly Cracked Pepper
5 Cloves Garlic
1/4 cup Lemon Juice
1/4 cup Melted Butter
3 tsp Rosemary

Ingredients (Mint Sauce):
1 tbsp Sugar
1 tbsp White Wine Vinegar
3 tbsp Mint Leaves
1 cup Sour Cream

Preparation

Method (Lamb):

Step One - Rub the entire surface of lamb with salt and pepper. With a sharp knife cut 12 -15 slits in lamb. Peel and cut the garlic into slivers, inserting the garlic slivers and rosemary into slits. Brush lamb with butter and lemon juice.
Step Two - Bake lamb at 180c for 35 minutes per half kilo. Or until the juices run clear. Reserve the juices to serve with the lamb. Serve with mint sauce.

Method (Mint Sauce):

Step One - Combine the sugar, vinegar, mint leaves and sour cream. Whisk until completely mixed. Refrigerate for several hours before serving to allow flavors to blend.

Serving with roasted root vegetables and potatoes.
